Ingredients For chipotle sweet potato soup

  • 1 tbsp. unsalted butter
  • 1 1/2 cups chopped white onions
  • 2 tbsp. brown sugar
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 garlic clove, minced
  • 6 cups chopped peeled sweet potatoes
  • 2 chipotle peppers in adobo sauce, chopped
  • 5 cups low sodium chicken stock
  • 1 cup half and half
  • 3 tbsp. lime juice
  • sour cream, optional
  • chopped chives, optional

How To Make chipotle sweet potato soup

    Melt butter in stockpot over medium high heat. Add onions, brown sugar, salt and cinnamon. Sauté for 4 minutes or until onions are light brown. Stir in the garlic and sauté for 1 minute. Add sweet potatoes and chipotle peppers and mix well. Sauté for 10 minutes. Stir in stock and bring to a boil. Reduce heat and simmer for 25 minutes or until sweet potatoes are tender, stirring occasionally. Remove from heat and cool for 10 minutes or longer. Pour half the soup into a blender and process until smooth. Repeat process with remaining soup. Pour both batches of pureed soup into stockpot. Pour half and half into a microwave safe bowl. Microwave on high for about 1 minute or until heated through. Stir warm half and half and lime juice into the soup. Ladle in soup bowls and garnish with a dollop of sour cream and chives. You may chill, covered for future use. Reheat before serving. If you are unable to tolerate the heat from two chipotle chiles, cut the amount in half. Serves 6 Texas Tables
