Cheesy Floret Soup

This is a delicious vegetable soup made with cauliflower and broccoli and a creamy cheese sauce. I'm not sure where I originally got this recipe but I have been making it for years.

This is such a simple and quick soup to make. I enjoy having garlic toast with it.

The pictures in this recipe are from where I doubled the batch , that's why it looks like so much more than the serving suggestions.

Ingredients

3 c
broccoli , florets ; fresh
3 c
cauliflower, florets ; fresh
3 stick
celery ribs ; sliced
1 small
onion ; chopped
3 c
water
1/2 tsp
celery salt
3 Tbsp
butter
3 Tbsp
all purpose flour
2 1/3 c
milk
1 lb
processed cheese (velveeta) cubed

Step-By-Step

Step 1 Direction Photo

1In a large sauce pan combine the first 6 ingredients.
Bring to a boil; reduce heat.
Cover and simmer for 12 - 15 minutes or until vegetables are tender.

2Mean while in a dutch oven pan melt butter ; stir in flour until smooth.

3Gradually stir in milk ; bring to a boil.

4Cook and stir for 2 minutes or until thickened.

5Reduce heat and add cheese.

6Cook and stir until the cheese is melted.

7Drain the vegetables mixture.

8Add the drained vegetables to the cheese sauce.

9Stir the vegetable mix into the sauce and heat through.
