Ingredients

2 c
chicken broth
1/3 c
onion, chopped fine
1 bag(s)
(12 oz.) frozen broccoli, chopped
1 1/3 c
dry mashed potato mix, plain
2 c
shredded swiss cheese
2 c
evaporated milk
1/2 tsp
salt
1/2 c
parmesan cheese, grated

Step-By-Step

1In a large saucepan, heat the broth, onion, and frozen broccoli until boiling. Reduce heat and simmer, covered, about 5 minutes, stirring frequently.

2Stir in the potato mix until well blended. Add the remaining ingredients, except the Parmesan.

3Heat over low heat about 5 more minutes, stirring occasionally, until soup is heated through and cheese has melted.

4Serve immediately and sprinkle with Parmesan cheese. Add croutons if desired.
