This is such a creamy delicious soup, ( no cream added), and so hearty.
Perfect for quick dinner with a salad, and crusty bread.
Easy,and Done!

Ingredients

1 large
head cauliflower
2 stalk(s)
leeks ,cleaned, sliced
2 clove
garlic
1 can(s)
white beans,drained rinsed
2 c
vegetable broth
2 c
whole milk
salt and pepper

Step-By-Step

1In a large pot sweat leeks,I used safflower oil.
Meanwhile, lightly steam your cauliflower, set aside.
2Add, garlic,saute',for a few min., then add cauliflower,stock,milk, and beans.
Simmer,5- 10 min.
3Use an immersion blender.
Serve, or keep warm.
A perfect little starter for dinner.
