Bean and Pasta Soup

I make lots of soup and usually make extra since I have a mess to clean up I may as well cook extra and freeze the soup to have on a sandwich and soup dinner night.

Ingredients

4 slice
bacon , diced
2 medium
carrots, chopped
2 stalk(s)
celery, diced
2 clove
garlic , finely chopped
2 Tbsp
chopped fresh basil[or 1 tbsp dried basil
1/2 tsp
dried oregano
1 can(s)
28 ounce stewed tomatoes
1 can(s)
540ml romano beans rinsed and drained
5 c
chicken stock
2 c
bow tie pasta or pasta of your choice
1 c
finely grated parmesan cheese
1 large
onion diced

Directions Step-By-Step

In large saucepan saute bacon over medium heat, cook for 8 to 10 minutes nearly crisp, add vegetables, garlic and herbs.

Pour tomatoes into a bowl and break up tomatoes into smaller pieces,,add tomatoes to saucepan, the beans which have been rinsed and drained and add the chicken stock, simmer add salt and pepper

Add pasta to saucepan and cook until done to your liking about 10 minutes....serve with parmesan cheesesprinkled over top.
