Ingredients

4 1/2 c
chicken broth (could use alternative for vegetarian option)
1 pkg
9 oz refrigerated cheese tortellini
1 can(s)
15 oz white kidney or cannellini beans, rinsed and drained
1 c
chopped fresh tomato
1/2 c
shredded fresh basil (or freeze dried)
1 - 2 Tbsp
balsamic vinegar
1/4 tsp
salt
1/8 tsp
pepper
1/3 c
shredded parmesan cheese

Step-By-Step

1In a large saucepan, bring broth to a boil.
2Add tortellini and cook until tender, about 6 minutes.
3Stir in the beans, tomato, and basil. Reduce heat; simmer uncovered for 5 minutes.
4Add the vinegar, salt, and pepper.
5Serve with cheese.
