Baked Potato Soup

This soup hits my comfort food craving any time. I also swap all ingredients I can, except bacon, for fat free versions.

Ingredients

2 large
baking potatoes
water
1 c
sour cream
1 can(s)
cream of chicken soup
1/2 c
shredded cheese
1 lb
bacon
1 small
onion, finely chopped
2 clove
garlic, minced
salt and pepper

Step-By-Step

1Chop onions into 1/4" cubes. In a soup pot, boil potatoes, onion and garlic in enough water to just cover the veggies until potatoes are fork tender.
2While potatoes are boiling, cut bacon into 1/4" pieces and brown. Drain on paper towels and set aside.
3When potatoes are done, remove from heat. Add soup, sour cream, and shredded cheese. Fold together with as much bacon as you like. I use the rest for salads or to top potatoes. Add salt and pepper to taste.
4Put back on medium heat and heat through, or simmer on med until soup is as thick as you like it.
