turkey/rice/veggie soup

this makes a huge pot of soup....it freezes well sooooo... i made it today...

whole turkey carcus
water to fill pan
1 Tbsp
hot,spicey salt
4 large
1/2 lb
long grain rice, uncooked
1/2 lb
frozen cut okra
1 1/2 lb
fresh frozen tomatoes[drained well]
leftover mashed potaoes[bout 11/2 cups]
leftover stuffing[about 1 cup]
1 Tbsp
onion powder
1 tsp
seasoned salt
1 tsp
fresh ground pepper
1 tsp
celery leaves
chives, dried


1break/cut turkey bones up so they fit in lg soup pan... add cold water to cover add hot spicey salt... cook on high til it starts to boil then turn to med med/low cook til meat falls off bones...put strainer in big bowl...pour turkey bones into strainer... return broth to pan.....cool bones enough to handle........then debone and cur into bit size pieces an put meat in with broth... taste.season with salt and pepper...cook on low heat bout 2 hrs... let broth reduce
2now add rice, carrots,tomatoes and okra...cook bout 45 min more... than add mashed potatoes and stuffing as a thickener.... heat bout 10 more min make sure it is hot...season with spices...sprinkle chives atop each bowl as u serve it
