12 oz turkey sausage links, casing removed
1 1/2 c
onion, chopped
3/4 c
carrots, diced
1 lb
dry lentils
3 qt
beef broth
28 oz
crushed tomatoes
1/2 tsp
marjoram, dried
1/2 tsp
thyme, leaves
bay leaf
2-3 tsp
lemon juice
salt and pepper, to taste

Directions Step-By-Step

Sauté sausage, onions and carrots over medium heat, until sausage is browned, 8 minutes. Crumble sausage with a fork. Add lentils, broth, tomatoes and herbs; bring to a boil. Reduce heat and simmer, covered until lentils are tender, 30 minutes. Discard bay leaf; season with salt and pepper and add lemon juice.
