This is a variation of my usual potato soup. I created this one simply because I had a bunch of celery I wanted to use up. It was deemed very tasty by my boyfriend, and I agree.

Ingredients

4 medium
potatoes, peeled and cubed
1 c
celery, chopped small
1/4 c
onion, chopped
1/2 c
chicken broth
1-1/2 c
half & half
1/4 tsp
salt
1 pinch
pepper
1/4 tsp
garlic powder
1 Tbsp
butter
1/2 c
cheese of your choice

Step-By-Step

1Place celery, potatoes, and onion in a pot of boiling salted water. Simmer for 15-20 minutes; drain.

2Stir in all other ingredients except cheese and simmer, uncovered, for 30 minutes.

3Add cheese and allow to melt completely; serve while hot.
