This soup is so tasty and quick...can be ready in 15 - 20 minutes flat. Spice it up to your liking...add some beans if preferred...Delicious!

Ingredients

1 lb
ground beef
1 pkg
taco seasoning mix
1 can(s)
tomatoes and chiles
2 oz
fresh shredded, cheddar
1 tsp
cumin
pinch, red or cayenne pepper - optional
1/2 Tbsp
minced dried onion
1 can(s)
cheddar cheese or nacho cheese soup
1 1/2 c
milk
sour
cream, green onion, shredded montery jack cheese for garnishes

Step-By-Step

1In a dutch oven brown off the ground beef and drain.
2Add the beef back to pan and add all remaining ingredients to the pan, except for the cheese and condiments.

Stir well and simmer for roughly 15 minutes or until heated through well.
3Add the cheddar cheese and stir until melted.
4Ladle into serving bowls and top with Monterey Jack cheese, green onions, sour cream and nacho chips if prefer.

To reheat you may want to add some more milk, it will thicken up some.
