Peel and cube potatoes. Place in pot. Cover with only enough water to cover potatoes. Boil potatoes and onion together until almost done.
In a separate sauce pan melt butter. Add flour. Stir till smooth. Add milk. Stir till begins to thicken.
Pour butter mixture into potatoes. Stir. Add enough milk to desired consistency. Add cheese and bacon bits if desired.
