I wanted some nice warm soup but I have so many food allergies & sensitivities that none of the recipes I found would work for me. So I came up with this one for my crock pot, I love cooking soups & stews in the crock pot.

Ingredients For crock pot cheesy potato-broccoli soup

  • 1 can
    broccoli cheese soup, 10.5 oz
  • 1 can
    evaporated milk, 12 oz
  • 1/2 box
    velveeta
  • 2 lb
    frozen broccoli florets
  • 4-5
    large potatoes, your favorite kind, cut into cubes for cooking
  • 2 c
    reserved starchy water from potatoes
  • 1/2 stick
    butter
  • 1 - 2 Tbsp
    onion flakes, dehydrated
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    salt
  • 1/2 tsp
    celery salt
  • 1 tsp
    garlic powder
  • 1 tsp
    poultry seasoning
  • dash
    hot pepper sauce, optional

How To Make crock pot cheesy potato-broccoli soup

    Bring a large pot of water to boil, add a few pinches of salt & the chopped potatoes. Boil potatoes until tender, drain, reserving 2 cups of liquid.

    Mix together soup, milk, & seasonings, pour in crock pot. Add butter & reserved cooking liquid.

    Add remaining ingredients, stir to combine.
  • 4
    Cook on high 3-4 hours, or on low for 6-8 hours. If cooking on high, stir half way through cooking.
