Ingredients

2 Tbsp
vegetable oil

carrots, chopped
4
celery stalks, chopped
2
onions, chopped
1 tsp
dried tarragon
3
potatoes, boiled and smashed
8 oz
smoked salmon, crumbled
2 qt
fish stock
2 qt
milk
1 Tbsp
black pepper

Step-By-Step

1Heat oil in stock pot on medium. Add chopped vegetables and saute until onions are translucent.
2Add tarragon and fish stock to deglaze pan.
3Stir in smashed potatoes and smoked salmon. Bring to a simmer.
4Add milk and pepper and cook until heated through.
