I've been on the lookout for a 'traditional' oyster stew recipe to make for Christmas Eve. I think this is it!

Prep time is next to nothing if you buy your oysters already shucked!

Ingredients

1 pt
oysters, with liquid
8 Tbsp
unsalted butter (1 stick)
1/2 c
shallots, minced
1 c
light cream
3 c
whole milk
1/2 tsp
salt
to taste
cayenne pepper
additional
butter for serving

Step-By-Step

1Saute shallots in butter.
2Add milk and cream, and simmer until almost boiling.
3Season with salt and pepper.
4Add oysters and liquid. Simmer until edges curl.
5Serve in individual bowls with a pat of butter on top.
