When away at the races I need to make meals that are easy and quick and also allow me to bring ingredients that do not need to be refrigerated. This chicken soup recipe is basic but it works well after a long day/night at the track.

Ingredients For track side chicken soup

  • 8 c
    water
  • 8 tsp
    chicken base
  • 13oz can
    premium chunk chicken breast (sams club)
  • 6 oz
    whole grain spaghetti

How To Make track side chicken soup

    Bring water to a boil
  • 2
    Add chicken base and bring to a second boil
  • 3
    Add chicken and juice from the can.
  • 4
    Break the spaghetti into thirds and add to the pot.
  • 5
    Bring to a boil again and reduce to a simmer. Stir occasionally for 10 min or until pasta is tender.

    Salt and pepper to taste.
