Ingredients

3/4 stick
butter
1/2 c
all purpose flour
6 c
chicken broth
1 can(s)
diced tomatoes, undrained

onion, chopped

rice
2 large
carrots, peeled and diced
2 stalk(s)
celery, peeled and diced
4 clove
garlic, minced
3 stalk(s)
green onions, sliced

whole bay leaf
1/2 tsp
dried whole thyme
3 Tbsp
cajun seasoning (or to taste)
1/2 tsp
ground black pepper
1 Tbsp
salt
1/2 lb
chopped cooked chicken meat
1/2 lb
raw shrimp, peeled, deveined and tails removied
1/2 lb
sliced andouille sausage or other smoked sausage
2 c
frozen sliced okra
1 can(s)
corn, drained

Directions Step-By-Step

Melt butter in the bottom of a soup kettle over medium heat. Stir in flour. Cook stirring constantly until well browned.

Slowly stir in chicken broth and tomatoes. Cook for 2 minutes. Mixture should not be lumpy.

Add remaining ingredients except corn, okra and meat.

Bring to a boil and let simmer for 30 minutes until vegetables are tender.

Add okra, meats, and corn. Simmer for another 15 to 20 minutes.

Remove bay leaf and serve in a hot bowl.
