green chile chicken stew

I am sure there are dozens of variations of this recipe, but it is so good one more won't hurt huh? My mother in law gave me a copy of this a couple of weeks ago. I don't know where she received it from. Really easy to fix and very easy to tweak to your own taste. Can be made on stove top or crock pot.

Ingredients For green chile chicken stew

  • 3 lb
    chicken breast, cubed
  • 3 c
    chicken broth ( i used low sodium)
  • 1 lg
    onion, diced
  • 3-4 md
    yukon gold potatoes, diced ( any type will do)
  • 2 lg
    carrots, sliced ( not real thin)
  • 7 oz
    green chiles( more if you like )
  • 3 Tbsp
    evoo
  • 2 Tbsp
    unsalted butter
  • 1/2 tsp
    black pepper
  • 1 1/2 tsp
    chili powder
  • 3 clove
    minced garlic
  • salt to taste

How To Make green chile chicken stew

  • 1
    Dice chicken, potatoes and onion about the same size. Carrots thin sliced. ( I used the pot I was cooking in) add evoo to pot and heat on medium, add chicken and cook until white. Add garlic to the pot and let cook about 2 minutes

    Now throw everything else into the pot and let simmer until potatoes and carrots are tender ( yep that's how I done it)

    If using the slow cooker/crock pot, just throw everything in and turn to low until potatoes are tender and chicken is done.
