Creamy Chicken Vegetable Soup

I love a good soup on a cold winter evening. My grandson enjoys a soup similar to this at a resturant we frequent so I wanted to come up with something that he would like and I hit the jackpot with this one. We have a cold week ahead so this one is going to be great for warming us up.

Ingredients

4 Tbsp
butter
6 Tbsp
rice flour
1 c
snow peas
12 oz
frozen peas and carrots
4 c
chicken broth
2
chicken breasts-cooked and shredded
2 c
cream
salt & pepper to taste

Step-By-Step

1In a large sauce pan melt butter whisk in rice flour to make a rue. Once it is smooth add the chicken broth.
2Add the peas and carrots and the snow peas. Let it simmer and thicken.
3Add the shredded chicken. Keep simmering about 30 minutes or so.
4Stir in the two cups of cream.
