Chinese Chicken Noodle Soup

Really good and very healthy. You can make it mild or spicy. I know you will love it. Its a great one pot dish.

Ingredients

1 1/2 lb
chicken thighs, skinless and boneless or breasts, i use both
1 pkg
matchstick carrots
1 pkg
brocoli slaw
32 oz
chicken broth
32 oz
vegetable broth
1
large onion, diced fine
4 stalk(s)
celery, diced fine
8 oz
shitake mushrooms, fresh
1/2 c
soy sauce
1 tube(s)
miso paste
1/4 c
shredded fresh ginger
1 pkg
lo mein or rice/buckwheat noodles, uncooked
1 bunch
green onions, sliced
2 Tbsp
black sesame seeds
2 Tbsp
coconut oil
1 tsp
sesame oil
1 pkg
wonton strips for salads

Step-By-Step

1cut your chicken into 1 inch cubes or strips
2stir fry your chicken in the coconut oil and sesame oil
3when chicken is halfway done, add, the onions, carrots, celery, mushrooms, ginger and half of the soy sauce
4when chicken is done, add both of the broths, the miso paste and bring to a boil, reduce heat and simmer for 15 minutes.
5Now add the broccoli slaw and the noodles
6cook until noodles are done. If too thick, add filtered water or more veggie broth. Add more soy sauce if needed.
7serve with green onions, sesame seeds and wonton strips.
