I came up with this recipe in an effort to prepare a low fat, hearty meal for my family. My 10 years old twins and 12 years old daughter really like the soup, which says a lot. There's truly a lot of flavor in this soup.

Ingredients For fajita black bean soup

  • 2 1/2 lb
    beef top round steak, boneless, sliced into thin strips
  • 3 Tbsp
    canola oil
  • 1
    yellow onions, chopped
  • 1 Tbsp
    hot hungarian paprika or chili powder
  • 1 tsp
    black pepper
  • 5 can
    seasoned black beans
  • 16 oz
    mixed vegetables, frozen
  • 32 oz
    cauliflower, frozen
  • salt to taste
  • mexican blend shredded cheese
  • tortilla chips

How To Make fajita black bean soup

  • 1
    Under medium heat, in a large soup pot or Dutch oven, brown meat for 15-20 minutes Add onions and cook until tender. Add seasonings, adjust to taste.

    Add seasoned black beans and vegetables. Stir well. Lower heat to simmer for 1 hour.

    Add cauliflower and let simmer another 10-15 minutes. Top with cheese and serve with tortilla chips.
