This is a family favorite soup that is easy to make.

Ingredients

1 lb
ground beef
1 large
onion minced
3/4 c
carrots minced
3/4 c
celery diced
1 tsp
basil
1 tsp
parsley
4 Tbsp
butter
3 c
chicken broth
4 c
potatoes cubed
1/4 c
all purpose flour
2 c
cheddar cheese (or velveeta) cubed
1 1/2 c
milk
1/4 c
sour cream (optional or add on top of bowl)

Step-By-Step

1IN A LARGE POT, MELT 1 TABLESPOON BUTTER OR MARGARINE OVER MEDIUM HEAT: COOK AND STIR VEGETABLES AND BEEF , UNTIL BEEF IS BROWN.

2STIR IN BASIL AND PARSLEY. ADD BROTH AND POTATOES. BRING TO A BOIL, THEN SIMMER UNTIL POTATOES ARE TENDER, ABOUT 10-12 MINUTES.

3MELT THE REMAINDER OF BUTTER AND STIR IN FLOUR. ADD THE MILK, STIRRING UNTIL SMOOTH. ADD CHEESE AND STIR UNTIL MELTED.

4GRADUALLY ADD MILK MIXTURE TO THE SOUP, STIRRING CONSTANTLY. BRING TO A BOIL AND REDUCE HEAT TO SIMMER. ADD SOUR CREAM(optional) AND HEAT THROUGH. DO NOT BOIL.

5ADDITIONAL SIDES THAT YOU CAN PUT ON TOP OF YOUR BOWL OF SOUP:
DICED PICKLES, ONIONS, LETTUCE AND TOMATOES OR ANYTHING YOU WOULD PUT ON A CHEESEBURGER….
