Ingredients For split pea plus soup

  • 1 c
    chopped onions
  • 2
    medium carrots, thinly diced
  • 1/2 c
    finely chopped celery
  • 2 clove
    minced garlic
  • 1 c
    finely chopped kale
  • 1 c
    diced potatoes
  • 1-8 oz. can
    pumpkin puree
  • 2 Tbsp
    olive oil
  • 1/4 lb
    diced ham
  • 1/2 tsp
    dried parsley
  • 1 tsp
    salt or accent
  • 3/4 tsp
    black pepper
  • 1/4 tsp
    red pepper flakes (opt.)
  • 1
    bay leaf
  • 1 lb
    dried split green peas
  • 8 c
    water or chicken broth
  • (i used a combination or water, goya chicken bouillon packets, and vegetable flavor enhancer to make 8 cups of flavored broth.)

How To Make split pea plus soup

    In a large pot, sauté onions, garlic, celery and carrots in olive oil until the vegetables start to soften. Add potatoes and kale and cook a little longer.

    Rinse and sort through the split peas.

    Add the peas and the remainder of the ingredients, except the pumpkin. Bring to a boil.

    Turn down the heat and simmer for about an hour. Stir in the pumpkin and continue simmering for another hour to an hour an a half until it gets as thick as you like it.

    Stir frequently while cooking so it doesn't stick or burn on the bottom.
