    slices pepperoni
  • 1 c
    chopped onion
  • 6 c
    chicken broth
  • 9 oz
    fresh or frozen cheese tortellini
  • 5 oz
    baby spinach

How To Make tortellini pepperoni spinach soup

    Cut the pepperoni into quarter rounds and add to heavy stock pot over medium heat. Stir and let the pepperoni release some of its fat. Add chopped onion and saute till softened.

    Add broth, bring to a boil, add tortellini and simmer till the tortellini floats to the top (or according to package directions)

    Stir in spinach. Serve with some Parmesan shreds sprinkled on top.
