Shrimp Gazpacho

Received this recipe from a friend of ours in McMinneville, TN. One of the most refreshing and oh so delicious gazpacho I've ever had! An awesome addition to a hot summer meal.

pinch tips: How to Skin Carrots, Potatoes and Apples


1/2 lb
shrimp (cooked and deveined)
lemons (juice squeezed)
2 1/2 c
tomatoes (diced)
1/2 c
v-8 juice
1 1/2 c
mr. & mrs. t bloody mary mix
2 c
cucumbers (peeled, seeded and chopped)
1/2 c
onions (finely chopped)
1/4 c
parsley (minced)
1/2 c
green peppers (chopped)
1 1/2 tsp
1 Tbsp
tabasco (or more to taste)
1/3 c
olive oil

Directions Step-By-Step

Cover shrimp with lemon juice. Refrigerate to chill while rest of gazpacho is being prepared (about 10-15 minutes)
Combine remaining ingredients, stir to combine all ingredients evenly. Add shrimp and lemon juice, blend and ENJOY!
