Ingredients

1 lb
italian sausage (hot or sweet)
2 c
rough chopped spinach
1 or 2 clove
garlic
2 can(s)
italian style tomatoes (14.5 oz)
1 c
sliced carrots
1 can(s)
great northern beans - undrained (14.5 oz)
2 small
zucchini or summer squash - cubed
1/4 tsp
black pepper
1/4 tsp
kosher salt
2 can(s)
beef or chicken broth 14.5 oz cans.

Directions Step-By-Step

In stock pot, brown sausage with garlic, stir in broth, tomatoes and carrots.
Add salt and pepper, reduce heat, cover ans simmer 15 mins.

Stir in beans with liquid and squash, cover and simmer for another 15 min or until squash is just tender.

Remove from the heat and add spinach, replace the cover and allow the heat from the soup to cook the spinach.

Ready to serve in 5 min.
