Great for supper in the fall along with some crusty bread and a salad. Also a good "starter" for Thanksgiving dinner.

Ingredients

3 Tbsp
butter, room temperature
1 medium
onion, finely chopped
5 c
chicken stock
1 tsp
salt
1/2 - 1 tsp
freshly ground pepper
16 oz
canned pumpkin
1/2 c
heavy cream
1/4 c
toasted pumpkin seeds

Step-By-Step

1In large, heavy sauce pan, melt butter. Add onion and cook over medium heat until onion is soft. Add broth, salt and pepper. Bring to a boil. Add pumpkin, combine thoroughly. Lower heat, cover; simmer for 45 minutes. Add cream and heat through. Serve immediately. Top with toasted pumpkin seeds, if desired.
