Ingredients

2 can(s) tomato soup (10 3/4 oz.) , undiluted
1 can(s) petite diced tomatoes (14 1/2 oz.) i use flavored tomatoes, either with italian seasonings or onion & garlic.
2 1/2 c buttermilk
2 Tbsp chopped fresh basil
1/4 tsp fresh ground pepper
shredded fresh basil for garnish

Debbie's Notes:

I am not too much of a tomato soup fan, but I just love this wonderful soup.It not only tastes good, it makes a beautiful presentation. Simply add some crunchy garlic bread sticks and you have a special meal in a hurry.

The buttermilk in this recipe adds a wonderfully rich flavor and texture. Bring on the grilled cheese!

 

Directions

Cook first five ingredient in a 3 quart saucepan over medium heat, stirring constantly for 6-10 minutes until thoroughly heated.

Remove from heat and serve in a mug or bowl. Garnish with shredded fresh basil if desired. Serve piping hot with bread sticks, garlic bread or croutons.

congrats on the ribbon...I just made this last night, not this recipe...mine is almost identical though...I use milk and cream instead of the buttermilk...otherwise the same nummy

Oh I cannot wait to try this! I used to get a creamy tomato dill soup at my favorite italian deli but we've moved so this my be the next best thing! I might try subsituting the dill for the basil though. I tried making this from scratch with fresh tomatoes from garden but jsut toooo much work. I'm excited to try this.

Lastnight I made this fabulous soup for my husband and I. Followed per directions and used a can of Basil/Garlic Petite Diced Tomatoes. My husbby and I loved it! The buttermilk made it smooth and delish. Next time I may drain a 2nd can of tomatoes since we loved the pieces of tomato in it, or better yet, will double the recipe! Thanks again Debbie :)
