Mashed Potato Soup

- baking potatos
- 4 slice
- 4 Tbsp
- 1/3 c
- 4 c
- 4 oz
- shredded cheese
- salt & pepper to taste
- 4 oz
- sour cream
1Prick potatos with fork, microwave on high until cooked, about 12-15 minutes.
2Let cool slightly (i throw mine in the freezer for 5-10 minutes).
3scoop out the flesh and mash with fork.
4cook and crumble bacon.
5Melt the butter in large saucepan over medium heat
6Add flour and whisk until smooth and light golden.
7Slowly whisk in milk and cook until thickened, 5-6 minutes.
8Stir in cheese, potatos and salt and pepper. Cook until cheese melts.
9Whisk in sour cream and bacon, serve when ready.
