Loaded Potato Bacon Soup

I wanted a non-cream potato soup that was flavorful and hearty. The bacon, chives and sour cream did the trick. Even my husband, who dislikes any sort of potato soup, thought it was delicious!
You could add cheese if you like, but without it, the bacon and chive flavors really come through.
