| 3 | potatoes, chopped |
| 1/2 c | water |
| 1/2 c | all purpose flour |
| 1 c | white wine |
| 4 c | beef stock |
| 4 c | carrots, diced |
| 1 lg | onion, chopped |
| 2 lg | onion, diced |
| 1 1/2 lb | bacon, thickly sliced and diced |
| 3 clove | garlic, minced |
| 6 lb | lamb shoulder, boneless |
| 1/2 tsp | salt |
| 1/2 tsp | pepper |
| 1 tsp | thyme, dried |
| 2 tsp | white sugar |

Directions
Cook bacon in large, deep skillet. Cook over medium-high till evenly brown. Drain and crumble then set aside.Put lamb, salt, pepper, and flour in large mixing bowl. Toss to coat meat evenly. Brown meat in frying pan with bacon fat/grease.Put meat into crock pot (leave 1/4 cup of fat in frying pan) Add garlic and yellow onion and saute till onion is golden. Deglaze frying pan with 1/2 cup of water and then add garlic-onion mix to crock pot with bacon pieces, beef stock, and sugar. Cover and simmer for 1 1/2 hours.Add carrots, onions, potatoes, thyme, bay leaves, and wine. Reduce heat, simmer 20 minutes or until tender.
