This soup can be served either warmed or chilled, as you prefer. Very sweet strawberries are best for this recipe. Otherwise, you may need to add more sugar.

Ingredients

4 c
hulled strawberries
1 c
sugar
1 c
sour cream
4 c
cold water
1 c
claret wine

Step-By-Step

1Rub the strawberries through a fine sieve, or puree them in a blender or food processor. Place them into a large cooking pot.

2Add the sugar, then the sour cream, and mix well. Add the water and wine and heat very slowly over low heat, stirring with a WOODEN SPOON. Do not boil. Serve warm or cold.

3When serving cold, you may garnish with a few whole berries.

Can also make this soup using raspberries either alone or with strawberries.
