this is a good soup for those cold days when you want something quick to make for supper

Ingredients

5 to 6
potatoes, peeled and chopped
1 Tbsp
butter
1 small
onion, chopped finely
1 c
chicken stock (homemade if you'd like)
1 tsp
salt
1/4 tsp
pepper
2 oz
cheese, shredded
1 tsp
heaping rosemary chopped, fresh
bacon as garnish (optional)

Directions Step-By-Step

Melt the butter in a heavy saucepan. Add the onion and cook on medium for 5 minutes.

Add the potatoes and the remaining ingredients. Let the soup simmer for 20-30 minutes.

Puree about half of the mixture, leaving some of the potatoes and onions intact.

Garnish with bacon, sprinkle with some cheddar cheese.
