potatoes, peeled and chopped
onion, chopped finely
chicken stock (homemade if you'd like)
heaping rosemary chopped, fresh
bacon as garnish (optional)
1Melt the butter in a heavy saucepan. Add the onion and cook on medium for 5 minutes.
2Add the potatoes and the remaining ingredients. Let the soup simmer for 20-30 minutes.
3Puree about half of the mixture, leaving some of the potatoes and onions intact.
4Garnish with bacon, sprinkle with some cheddar cheese.
