Baked Potato Soup

We serve this soup as the meal very filling and taste just like a baked potato.

Ingredients

4 large
baked potatoes peeled and cut into bite size chunked
4 slice
bacon cut into small pieces
1 1/2 Tbsp
roasted garlic
3 Tbsp
flour
1 tsp
salt
1 tsp
dried basil
1/2 tsp
pepper
1/4 c
sour cream
3 c
chicken stock (i use homemade)
1 c
half and half or heavy cream
1 c
shredded sharp cheddar cheese plus some for garnish
1 tsp
parsley for garnish
1 large
sweet onion chopped

Step-By-Step

1In a large soup pot cook bacon, rendering fat. Once cooked remove bacon from pan leaving fat.
2Add onions and garlic cook until tender
Stir in flour, salt, basil and pepper mix well
3Gradually add chicken stock/broth. Bring to boil and stir for 2 or 3 minutes until it become thickened.
4Add the potato that you cut up smaller first and mash it into the liquids (I used an immersion blender)
5Then add the 1 cup cheese when it is melted add the cream and mix well.
6Add the rest of the potatoes and heat through. Garnish with the bacon from earlier. the parsley and more cheese.
