Anita's Dorm Room Vegetable Soup

I developed this soup for my daughter Anita, the first one of my children to leave the nest. This recipe works great for college dorm rooms. Have each diner bring one of the ingredients. Look for low-sodium options to make a healthier soup.

Slow Cooker Crock Pot


1 small
can cubed potatoes with liquid
14 oz
can chicken or vegetable broth
14 oz
can diced tomatoes with juice
1 small
can peas and carrots, drained
1 small
can green beans, drained
1 can(s)
white beans with liquid
1 small
onion, chopped
2 stick
celery, sliced
a few dash(es)
of minced garlic, crazy pepper, tony's creole seasoning

Directions Step-By-Step

Combine all ingredients in a crock pot. Add water if necessary to make soup consistency. Cook on high power for 2 hours, then on low power for 2 more hours.
Serve simply with whole grain bread and butter or sandwiches for a complete meal.
