I obtained the base recipe from the internet and modified it to taste. This soup never lasts very long so double the recipe for more people. The doubled recipe will easily fit into an 8 quart soup pot.

Ingredients

1 lb
ground italian sausage, mild
6 c
chicken or beef stock
1 medium
onion, chopped fine
5 clove
garlic, minced
1 c
carrot, peeled and chopped
1 Tbsp
tomato paste
1 tsp
sugar
1 Tbsp
basil, dried
1 Tbsp
oregano, dried
1 tsp
salt
1/2 tsp
pepper
1 can(s)
14.5 oz diced tomatoes, pureed
1 can(s)
15 oz great northern beans, drained and rinsed
1 c
alphabet pasta, uncooked

Step-By-Step

1In a soup pot, on medium heat, cook and drain Italian Sausage, then return to pot.
2Add onions and carrots, saute for 5 minutes, add garlic and saute for 1 minute longer. Add Tomato Paste and saute for 1 minute. Add Tomato puree and cook 2 minutes.
3Add all other ingredients, except pasta. Bring to boil, lower heat, cover and simmer for 45 minutes. Add pasta and cook 15 minutes or until pasta is tender.
