5 minute tortilla soup

This is my in a hurry need dinner fast recipe. it's all things that are staples in my pantry. The next time it's 5 minutes until you need dinner on the table give it a try, it's faster than take-out! Don't let the list of ingredients scare you off, it's mostly spices you have on hand.

Ingredients For 5 minute tortilla soup

  • 1 can
    rotel tomatoes, mild or original
  • 1 can
    corn kernels, drained
  • 1 can
    navy beans, drained
  • 4 c
    chicken broth, low salt
  • 1 dash
    each of onion salt, garlic salt, and pepper
  • 1/4 tsp
    ground cumin
  • 1/2 tsp
    oregano, dried
  • 1/2 tsp
    chili powder (hot or mild, your choice)
  • tortilla chips
  • shredded cheddar cheese or mexican blend
  • optional
    diced avocado
  • optional
    diced chicken, left over or from the deli, i often do it without the chicken

How To Make 5 minute tortilla soup

  • 1
    Place the tomatoes, corn, beans and broth in a pan. Add the spices. Bring to a boil and cook for a couple of minutes.

    If you are using cooked chicken add it now and bring back to a boil.
  • 3
    Place some crushed tortilla chips, shredded cheese and avocados (if using them)in the bottom of each bowl.

    Ladle hot soup into the bowls and enjoy!
