Ingredients For crab soup

1 Tbspolive oil, extra virgin

3/4 cscallions, chopped

2 clovegarlic, minced

3 Tbspall purpose flour

2 cclam juice or seafood broth

2 cmilk, low-fat (1%)

3 Tbspdry sherry
-
1/2 tsplemon pepper
-
1/4 tspwhite pepper
-
1 pinchcayenne pepper
-
1 lbcrabmeat, picked free of shells

1 Tbspchives, fresh, chopped
How To Make crab soup

1Heat the oli in a large saucepan until hot. Add the scallions & garlic & cook, sitrring occasionally, until tender, 3 - 4 minutes. Stir in flour; cook 1 minute. Slowly add the broth & milk; bring to a boil. Cook, stirring occasionally, until smooth & bubbly, about 8 minutes. Stir in the sherry, lemon pepper, white pepper & cayenne. Reduce the heat & simmer, uncovered, until the flavors are blended & the soup thickens slightly, about 5 minutes longer. Stir in crabmeat; heat through. Sprinkle with chives. Serve at once.
