Ingredients For crab soup

  • 1 Tbsp
    olive oil, extra virgin
  • 3/4 c
    scallions, chopped
  • 2 clove
    garlic, minced
  • 3 Tbsp
    all purpose flour
  • 2 c
    clam juice or seafood broth
  • 2 c
    milk, low-fat (1%)
  • 3 Tbsp
    dry sherry
  • 1/2 tsp
    lemon pepper
  • 1/4 tsp
    white pepper
  • 1 pinch
    cayenne pepper
  • 1 lb
    crabmeat, picked free of shells
  • 1 Tbsp
    chives, fresh, chopped

How To Make crab soup

  • 1
    Heat the oli in a large saucepan until hot. Add the scallions & garlic & cook, sitrring occasionally, until tender, 3 - 4 minutes. Stir in flour; cook 1 minute. Slowly add the broth & milk; bring to a boil. Cook, stirring occasionally, until smooth & bubbly, about 8 minutes. Stir in the sherry, lemon pepper, white pepper & cayenne. Reduce the heat & simmer, uncovered, until the flavors are blended & the soup thickens slightly, about 5 minutes longer. Stir in crabmeat; heat through. Sprinkle with chives. Serve at once.
