Spinach Soup

Ingredients

2 pkg
frozen spinach, chopped
1/4 c
onions, chopped
1/3 c
sifted flour
1 Tbsp
salt
1/4 c
peanut oil
1/4 tsp
pepper
1/4 tsp
nutmeg
6 c
milk
1
water

Step-By-Step

1Cook frozen chopped spinach in unsalted water according to directions and drain.
2Heat oil in large saucepan.
3Add onion and saute until transparent (5 minutes).
4Remove from heat.
5Blend in flour, salt, pepper and nutmeg.
6Stirring constantly, gradually add milk.
7Then add spinach.
8Cook over medium-high heat (about 15 minutes).
9Stir often to prevent scorching.
