- potatoes, peeled & cut into bite-sized pieces
- 2 small
- onions, chopped
- carrot, pared & sliced
- celery stalk, sliced
- 2 tsp
- chicken base or granules
- 1 Tbsp
- parsley flakes
- 5 c
- water or chicken broth/stock
- 1/3 c
- 2 can(s)
- (12 oz) evaporated milk
1Put all ingredients except milk in crock pot.
2Cover and cook on low 10 to 12 hours (or High 3 to 4 hours).
3Stir in evaporated milk during the last hour of cooking.
4Before serving, you can puree soup using a blender, food processor or imersion blender, if desired, or you can leave it chunky.
5Garnish with diced ham, shredded cheese and sliced green onions. The question is croutons . . . or no croutons??
6Note: Feeling lazy? That's OK - take a 2 pound bag of frozen cubed hash browns and thaw before using in this recipe.
