What can I say I had leftover mashed potatoes and fresh broccoli.
I can honestly say it was the best Broccoli cheese soup I ever made and I have concocted many.

Ingredients

1 small
head broccoli
1 3/4 c
cold mashed potatoes
1 can(s)
15 1/2 oz chicken broth with garlic
3/4 to 1 c
mild cheddar cheese shredded

Directions Step-By-Step

Dice the uncooked broccoli flowers only. Add to chicken stock in sauce pan. heat to boiling. Add potatoes and cheddar cheese and stir on loow for 10 minutes. Serve when it thickens.

This will become my standby for extra mash potatoes.
