This is quite possibly THE BEST and easiest potato soup I have ever found !! Full of sausage, potatos, and onion, so creamy, and a bit spicy. :) I'm sooo glad it makes a LARGE pot full. You can eliminate the spicy sausage and use all regular sausage if you dont like too much spice or heat. SOOOO GOOOD !!!

Ingredients For country sausage n' potato soup

  • 1 lb
    any good brand regular breakfast sausage
  • 1 lb
    any good brand hot breakfast sausage (or regular, if you dont't like hot)
  • 1 lg
    onion, diced
  • 1/2 c
    celery, diced
  • 2 can
    (14.5 ounce) chicken broth
  • 2 can
    (10 and 3/4 ounce) cream of chicken soup
  • 2 can
    (10 and 3/4 ounce) cream of celery soup
  • 1 pkg
    (32 ounce) frozen southern style hash brown potatoes
  • 1
    soup can of milk ( or more, to thin soup)

How To Make country sausage n' potato soup

    In a large soup pot, brown sausage, onion, and celery until vegetables are tender and sausage is cooked.

    Mix together in a bowl, all the broths and soups. Stir until nicely blended, then add to the sausage mixture and mix until well combined. Stir in the package of hash brown potatoes.

    Simmer soup until potatoes are tender (about 20-30 minutes). Fill a soup can with milk and thin soup if needed (I find I need to thin mine a bit) Salt and pepper to taste as usual. Serves 8-10
