Cheesy Broccoli Soup

This creamy, cheesy broccoli soup is a favorite of my two kids. There is so much cheese in it..they hardly ever realize they are eating vegetables.

This recipe makes 4 quarts and freezes very well.

Ingredients

6 c
water
2 c
diced potatoes
1 c
diced onion
2
chicken bouillon cubes
1 bunch
fresh broccoli
1 lb
velveeta cheese
2 can(s)
cream of chicken soup
salt and pepper to taste

Directions Step-By-Step

Fill large stock pot with water and bouillon cubes. Wash and cut broccoli, potatoes and onion. Add to pot and boil for 1/2 hour or until potatoes are soft.
Turn stove top burner to low.

Add 1 pound of Velveeta cheese by cutting it into chunks and adding and stirring a little at a time to the pot.

Add two cans of cream of chicken soup and boil for 20- 20 minutes longer. Stir frequently until soup has thickened. Be sure to stir to the bottom of the pot to avoid burning.
