Ingredients For cheese soup

3/4 cfinely chopped carrots

2/3 cfinely chopped celery

1/3 cfinely chopped green onion
-
1/4 cmelted butter or oleo
-
1/3 call-purpose flour
-
2 cchicken broth
-
2 chalf & half (or canned milk)

1/4 tspsalt
-
1 1/2 cshredded sharp Cheddar cheese

1 TbspBrandy (optional)

Chopped fresh parsley
How To Make cheese soup

1In your soup pot, saute vegetables in butter until soft but not brown; blend in flour.

2Gradually stir in broth, then half & half.

3Cook, stirring constantly to keep from sticking to bottom of pan, until mixture thickens and boils.

4Stir in salt, cheese and Brandy (optional). Heat until cheese melts.

5Sprinkle with parsley.
