Cauliflower, ginger & curry velouté

Ingredients

minced onion
2 clove
minced garlic
2 Tbsp
butter
1
cauliflower, small florets
1
potatoe, peeled & cubed
4 c
chicken broth
1 Tbsp
minced fresh ginger
1 tsp
curry powder
1 tsp
lemon juice, fresh
dash salt &pepper
grilled croutons

Directions Step-By-Step

In a large heavy bottom pot or Dutch oven, tenderize inion and garlic in butter.

Add cauliflower, potato, and chicken broth. Bring to a boil.

Cover and simmer for approximately 15 minutes or until vegetables are tender.

Purée until smooth. Add ginger and curry before serving.
Garnish with croutons.
