- carrots, peeled and chunked
- ginger, 2x1" piece cut into matchsticks
- 3 c
- vegetable broth
1In larger saucepan melt butter and add carrots. Gently saute carrots and ginger.
2Add vegetable broth and cook until carrots are softened, about 25 minutes.
3Pour mixture into a food processor and puree.
4Season with salt and pepper and add the juice and zest of the orange.
5Serve hot or cold.
