Berry Buttermilk Soup1

- 2 c
- fresh or frozen blueberries or strawberries
- 1.5 c
- 1/2 c
- 1/2 tsp
- orange peel, finely shredded
- 2 Tbsp
- orange juice
- 2 c
1Thaw berries, if frozen; drain.
2If desired, set aside 5 or 6 berries for garnish.
3In 1 1/2-quart saucepan combine berries, water, sugar, orange peel, and juice.
4Bring to boiling.
5Reduce heat; cover and simmer 20 minutes.
6Cool 30 minutes.
7Pour into blender container; cover and blend until smooth.
8Stir in the buttermilk.
9Cover and chill thoroughly.
10If desired garnish each serving with reserved berry or thin orange slice.
