Baked potato soup My way

We had people come for dinner and I served this soup. Well Marie said never serve that soup to anyone that has a beard. Man or woman. LOL
Mozz all in her beard. LOL

1 Tbsp
chicken base or to taste
roux to thicken
2 oz
potato water
1/4 c
shredded carrots
1/4 to 1/2 c
sauted minced onions
2 Tbsp
butter only butter


1In a soup pot add the water, pepper, onions, chicken base. Simmer about 10 minutes. temper in the milk, & add the potatoes bacon & the Chedder cheese.
When the soup starts to get hot add a little roux . simmer at low heat adding roux to reach the texture you like.When you are ready to serve it blend in the sour cream and the mozzarella
