Ingredients

2 c
wild rice, cooked
3 medium
potatoes, washed and cubed
1/2 c
onion, chopped
1 qt
chicken broth
1 c
shredded cheddar or swiss cheese
3-4 slice
bacon, cooked, drained, then crumbled
1 pinch
parsley flakes
1 stick
wild asparagus, finely chopped
1 pinch
salt and pepper
1/2 c
light cream or milk

Directions Step-By-Step

Cook potatoes in the broth until tender, 20-30 mins. Also, cook wild rice according to the directions on the package- then set aside. Cook the bacon, drain, set aside to crumble into the soup later.

Add onion, cheese, bacon, cream or light milk.
Simmer, stirring frequently until the cheese melts; soup is hot, not boiling. Add cooked Wild Rice, Season with salt and pepper if needed. Garnish with a little Parsley or Wild Asparagus- (Optional)
