Mom's easy potato-corn chowder

I loved when my mom made this for those chilly nights!
Sometimes she would top each bowl off w/ some crumbled bacon, YUM!!

Ingredients

1 c
onion, chopped
2 tsp
minced garlic
1 Tbsp
butter
2 c
diced potatoes
1 c
red bell pepper, chopped
2 c
reduced-sodium chicken broth
1/4 tsp
pepper
1/4 tsp
marjoram
1
bay leaf
dash
nutmeg
1
16-1/2 oz can cream-style corn
1
7 oz can whole kernel corn
1
12 oz can evaporated milk, i used fat-free
paprika, for garnish

Directions Step-By-Step

In lg saucepan, cook onion, garlic and butter over medium heat for 5 mins, stirring often. Add potatoes, red bell pepper, broth, pepper, marjoram, bay leaf, and nutmeg. Bring to a boil.

Reduce heat to low and simmer 20 mins, stirring occasionally. Stir in remaining ingredients, except paprika. Bring to a boil.

reduce heat to low. Simmer 2-3 mins more. Remove bay leaf. Serve sprinkled w/ paprika.
